Kerak Telor (Traditional Betawi Omelette)
Kerak Telor is a heritage culinary delight of Jakarta dating back to the Dutch colonial era. Uniquely, this dish is cooked on a small wok without oil over charcoal embers. Midway through cooking, the wok is flipped upside down directly facing the charcoal to create a perfectly toasted, crispy crust. The rich flavors of the egg and sticky rice blend seamlessly with spiced roasted grated coconut (serundeng), aromatic galangal, ginger, and dried shrimp (ebi), offering a smoky, deeply savory fragrance.
